The Romantik Hotel Dorotheenhof in Weimar is home to the restaurant Le Goullon. The once renowned estate of the cavalry captain, Carl von Kalckreuth, is idyllically set in its own park and is still steeped in cultural history. The Thuringian cuisine is long established here, but there are hints of the chef’s own creations. The head chef recommends you taste many of the historical culinary delights’ of François Le Goullon, head chef in the court of Duchess Anna Amalia. Growing in the herb and vegetable garden, you can once again find purslane, salad burnet, saltbush, chard and much more, which is freshly picked and taken directly to the kitchen.
