Situated at the very West of Mid-Wales, on the Dyfi Estruary just south of Machynlleth, Ynyshir is Wales? finest destination restaurant and rooms. Housed in a grand old shooting lodge overlooking the Cambrian Mountains, Gareth Ward’s Michelin star, 4-AA rosette restaurant serves its Alternative British cuisine, using the UK larder to produce tasting menus that take you on a journey from start to finish. There is the choice of two tasting menus served each evening in the main restaurant, and a shorter set tasting menu for lunch. The chefs table, situated in the heart of the kitchen is also available for both lunch and dinner, with Gareth designing a surprise menu for the guests. Each menu offers numerous small courses, all simple and light, packed with beautiful flavours of land and sea. The menus showcase the best of Welsh ingredients following the seasons, such as Welsh Wagyu Beef and Anglesey Onions throughout the year, as well as locally foraged sea herbs from the estuary and greens from the woodland floor and Ynyshir’s extensive gardens. During hunting season expect to see wild deer and local duck, grouse and partridge, and in summer Welsh Lamb from the Dyfi valley. Gareth and his team pickle, salt, ferment and preserve fruits, leaves and berries carrying the harvests through the winter and into the spring. Expect to see dishes such as ?Not French Onion Soup?, ?Mackerel Sweet & Sour? and Gareths take on a Tiramisu all served alongside an extensive wine-list while overlooking the mountains.
