Ebisu is a typical Japanese “izakaya”, decorated in a contemporary style with food based on classic Japanese ingredients (including fish, meat and miso), served in a simple and elegant atmosphere. Dining in an izakaya in Japan is a very social occasion, where guests share a variety of different small dishes, maximising their enjoyment of the different flavours. Guests sit at the dining counter or in the restaurant, and watch the chefs at work. Dialogue between the guests and chefs is an old Japanese tradition which Ebisu seeks to maintain at Custom House, so come face to face with the authentic Far East by the large open charcoal grill, the robatayaki. Ebisu sources only the finest and freshest ingredients to put together the extensive menu featuring sushi, sashimi, skewers and grills.
